Orgasmic Monday
Okay, so after putting my menu together,grocery shopped, I needed to figure out what to cook for the day. Since I was in a lazy mode, I decided to make Chana and rice with sweet peas, also added a slice of naan (bought at indian store).
Chana (chickpeas) recipe
●2 cans of chickpeas (faster)
●2 chopped tomatoes
●1 pound chicken breast
●1 white onion(usually make it with red, but that's what I had on hand)
● 1 tbsp of oil (I used canola)
● 20 g of Chholey masala (I bought a box at an Indian store)
●1 tsp of salt
● Chilli powder (optional)
Cut chicken in 1/4 cube (smaller if you want).Marinated it with Creole seasoning, cayenne pepper, black pepper, basil. (You could add whatever you want.)
Put a pan on the stove on medium heat and wait for it to be hot. Put chicken and let it cook, then flip. (I like it when it get a little brown so I know it is fully cooked.)
Took out the chicken, and add the oil to the pan. Fry the onions til golden brown. Add the tomatoes, chickpeas make sure it is well blended and at the chholey masala, salt and chilli pepper. Mix well, then add chicken.
I like when mine a little brown so I keep stirring on medium heat, until it start sticking to the bottom.
Rice with sweet peas
I make it so often that I never measure.
A little bit of olive oil in a pot on medium heat. Add onions (not so much) and fry until golden brown. Add sweet peas and stir until it is soft. I add maggie chicken bouillon for flavor instead of salt. Add water, bring to a boil and add rice. Reduce heat and simmer until rice is tender.
And VOILA! !!

Stay-at-home mom dreams gone wrong
Most, if not all new mommies wish they could see more of their little blessings when it is time to go back to work. Some fortunate moms, including myself decided to ditch work and stay home instead.
I have always wanted to be a stay-at-home mom, but the ones portrayed in the "Real Housewives" with the nannies, the personal chefs, etc. Well, I am a stay-at-home mom and I am grateful to wake up everyday and see my little man smile. I have the opportunity to raise him in a healthy, safe environment, BUT where are the nannies, the shopping, the glamorous life?
Staying at home is really a full time job,from the time the rooster crows until the moon shines bright, I am up entertaining a very spoiled, energetic, quickly bored little boy (I am pulling my hair right about now). With all these avoidable fun with my little nugget I still feel the lost of my independence, which by the way means a lot to me. No nannies mean a very busy, bored unsocial mom. Lack of independence means lack of freedom to do as I please. So while everyone might love staying at home, it is one of the most suicidal, mind killing, self-lost experience that I had endured.
What am I doing about it?
1) Let go of those high expectations of being a stay-at-home mom
2) Bring in the positive (priceless moments with my nugget)
3) Enrolled in Gymboree classes ( interact with other moms)
4) Starting my own business
5) Starting, probably, my M.B.A. this fall.
Being a stay-at-home mom in a city with no family and friends, the only thing I could do is appreciate the man of the house, thank god everyday for what I have and take it one day at a time.

Naps or hell with it?
As moms, we all know how naps are important in a baby's routine. Especially if we don't want to battle with over tired little monsters. Yes that's what they become when they are tired, screaming and kicking late at night because they want to sleep.
Well I have recently abandoned my comfortable niche in Tampa for a week or so just to spend some much needed time with my family in Fort Lauderdale. Giuliano, my son, who of course loves being spoiled by all, decided he was too excited to take his naps.
THE RESULTS...
A very fussy baby came bedtime. He went from a 8:30pm bedtime to a 10:00pm. He was just scratching his eyes so much, I could of sworn they were coming off.
So TIPS to follow, which is what I did:
Let everyone know when naps are and make plans accordingly.
Do not let anyone or anything disturb his naps
Make sure you do your regular nap routines
And Lastly, TAKE A NAP TOO :)
Remember, happy baby means happy mommy.
